I often have no idea what to eat for lunch when I’m at home. Sure, there is enough in the fridge, but I just don’t know what to make. Because I usually prefer my lunch to be easy and healthy, I started making lunch salads.
I always start with a large handful of mixed salad. The version I’m using also has some pieces of onion in it. Than I start adding stuff I can find in my kitchen. This usually includes a tomato, some pieces of mozzarella, pine nuts and a bit of sweet ginger. If I have it I love adding pieces of young baby corn or I fry some pieces of smoked turkey and add it to my salad. The dressing is also very simple, because I only use some pepper, olive oil and vinegar.
