Sometimes I’m just in the mood to bake something sweet. It has to be something simple I can make with what I have in stock. Usually I end up making these really simple but delicious honey vanilla cupcakes.
For 12 cupcakes you only these 5 ingredients:
- 2/3 cup (150g) butter
- 1/2 cup (100g) sugar
- 3 tsp honey
- 3 eggs
- 1 1/8 cup (150g) self rising flour
I usually make 6 though, because basically the best moment to eat these is when they come out of the oven. Oh and you need a baking tray and cupcakes liners of course!
Prepare your oven by preheating it to 375F/190C. Now lets get started. Take out a big bowl and add the butter. Is it still very hard and cold? Mine usually is because I don’t have the patience to wait until it gets to room temperature. Well, just put it in the microwave for like thirty seconds. Add the sugar and honey and mix it all together.
Now you can add the self rising flour and eggs. Mix this all together as well, but be careful with the flour! You don’t want to have to clean your whole kitchen.
Time for the fun part! Line a cupcake tray with your cupcake liners and divide the mix evenly. Personally I love the mix almost even more than the final cupcakes, so time to munch on the dough! Don’t forget to place the tray in the oven for about 20 minutes.
Usually I’m to lazy to make a topping, but because these honey vanilla cupcakes are so delicious you don’ t really need it. Just add some whipped cream and enjoy!
