I already told you that I haven’t been cooking very often lately. One of the things I like to make when I do cook is a pasta with mushrooms and mozzarella. It’s easy, quick, healthy and it contains ingredients we usually have.
What you need for 2 persons:
1 1/4 cups dry pasta
2 cups (125g) mushrooms
2 tomatoes
3/4 cup (200g) mozzarella
3/4 cup (100g) small pieces smoked turkey
6 large fresh basil leaves
black pepper
2 tbsp olive oil
Start with heating water for your pasta and chopping the mushrooms. When the water is boiling add the pasta and 1 tbsp olive oil.
Heat the other tbsp olive oil in a large frying pan and add the turkey and mushrooms. Also add some black pepper and stir this mixture and the pasta regularly.
Chop the mozzarella, tomatoes and basil in small pieces. When the pasta is finished (10-13 minutes, depending on the pasta), drain it and add it to the mushrooms and turkey. Stir and divide over two plates. Add the mozzarella, tomatoes and basil to the plates as well and enjoy!
