Ok I have to confess. Since Romano (my boyfriend) and I started living together, he’s usually the one making us dinner. I don’t mind cooking, but I prefer to make the sweet stuff. Romano is a good cook though, and today I’d like to share one of his side dishes with you. Portobello mushrooms stuffed with goat cheese, walnuts and honey. Sounds nice right?
For this recipe you’ll need two portobello mushrooms, approximately 1/4 cup (70g) goat cheese, 1/4 cup walnuts and 1 teaspoon honey.
Preheat your over to 400F/ 200C. Now start with cleaning the mushroom (not with water, but with a brush) and removing the stem. If you want you can also use a teaspoon to remove the gills.
Put the goat cheese in a bowl and chop the walnuts.
Add the walnuts and honey to the goat cheese and use a fork to mix it al together.
Fill the mushrooms with the cheese mixture and place them in the oven for about 15 minutes. Easy right?
